Masala Chai translates to "spiced tea," though this blend honors the flavors that westerners have come to love when hearing the word "chai." The base is Assam, a black tea that does contain caffeine and tannins. The traditional spices are clove, cinnamon, ginger, cardamom, and black pepper.
To brew, steep 1tsp: 8oz boiling water, cover for 3-5 minutes. For iced tea, brew 2tsp:8oz boiling water steep 5-7 minutes, strain, then allow to cool. Add milk and sweetener to taste. Alternatively, add to a milk base of your choosing and allow to gently simmer for 5 minutes, then remove from heat, cover and allow to steep an additional 5 minutes before straining for a more decadent and authentic Masala Chai experience.
